When Halloween is over and November arrives it becomes pumpkin time. For as long as I can remember I've wanted pumpkin pie for my birthday. I LOVE Pumpkin Pie--but not all year long. Fall weather, santa ana winds and chilly mornings make me think of all things pumpkin. Well here in Chile it is spring weather with on-shore winds and warm mornings and everyone is wearing summer clothes. But nevermind that--I still want my pumpkin. Sooo, last week I found three pumpkins in the market, which were decorated for Halloween, and seemed just the right size for cooking. I did some research online and found the best way to cook a pumpkin and prepare it for yummy recipes like pumpkin pie and pumpkin bread. Here is a chronicle of my first attempt at homemade pumpkin puree.
Clean the outside of the pumpkin with just water. Cut it in half removing all seeds and strings and then cut into pieces to fit into an oven-safe pot. Thankfully I shipped down my Le Creuset pot. Add three cups of water and bake, covered at 350 degrees for 45-60 minutes or until pumpkin is tender. Here is my baked pumpkin. You can't see the magic marker face drawn on by the store employees.

With a spoon, scoop out and remove the pulp from the skin of the pumpkin. Side note: these are my real nails. I got a french manicure last week.

Now you have to strain the pumpkin to remove extra liquid. Watery pumpkin pie is not a good thing. I wrapped mine in cheesecloth. Thanks Jillian for the cheesecloth.

Place in the refrigerator overnight to strain.

By the way, this is my transformer which all my American appliances have to be plugged into.

I'm so glad you wrote about your nails, because the first thing I thought was, "Whoa! Check out those nails! Does she have a french manicure?" So thanks for the explanation.
Those look sooooo yummy... all 4 eggs and 1 cup of oil. Definitely healthy. :)

PS . . . I missed the blog about your nails. I even went back to look for it. For some reason I can't find it. Whats the deal with your nails? Can you keep them up down there?

She took her nails off a few months before she left, and they were in BAD shape after having acrylics for so many years. She did a ton of nail health stuff to try and get them strong before the mish. So I was just complimenting on how good they look. Those are her real nails, she just got a french manicure.
